Happy Friday, folks. Just a quick note that Team CWD is taking a little hiatus this week, as the squad ventures up north to go Downeast. We’re spending a few days in Acadia, enjoying the hikes, atmosphere, and yes — of course — the lobster. So, no elaborate recipe this week.
That being said, as I type this prior to our departure, here is a nice way to use up a few of your last lingering tomatoes. Brown some pre-made gnocchis in a cast iron skillet, heavy with butter. Put them aside, and in the same pan, sauté garlic in butter. As it gets aromatic, add a bunch of diced tomatoes and cook until they start to get smushy. Add as much butter as your heart desires (pun!). Toss back in the browned gnocchis, top with fresh mozzarella cheese, and put under the broiler until the cheese is gooey.
Enjoy that — I’m going to go crush a lobster roll.
