Happy Friday, nerds! I’m looking forward to a nice fall weekend.
Let’s jump right into the recipes. Last weekend, I got a chance to try out a new toy — a cowboy wok, also know as a discada, a disco, or just plain fun. Given we had quite a few folks over, I thought it would be fun to make some fajitas over an open fire — namely, our Solo Stove. I had a ton of fun doing it, learned some lessons for next time, and thought the meal turned out pretty well.
If you’ve got the necessary equipment, I’d encourage you to try it out over a live fire, but if not, I think you could do the same thing in a regular wok or cast iron pan on your stove. Just take out each ingredient as it finishes cooking to make space in the pan.
Chop up a bunch of meat and season. I used bacon, flat iron steaks, and chicken, but chorizo or sausage and/or pork would be nice as well. Dice up some peppers and onions as well. Heat up your cooking surface until it’s hot — but not too hot, or you’ll get a grease fire and ruin all your bacon.
Add bacon to the center pan and let the fat start to render and the meat is just cooked through. Move the bacon to a cool part of the pan and add the chicken. Let that cook almost through, and move off to the side as well. Add in the steak and do the same. Toss in your veggies and let those start to soften, then mix everything together into the center of the pan and top with cheese. Add some tortillas to the sides to heat — then take off the heat and enjoy with guacamole and salsa.
There ya go. Easy, peasy, and also makes for a great show. Kind of like a hibachi dinner!
